もちもち食感がクセになる！
「ひっつみ」とは、岩手県の北上盆地を中心とした地域で食べられている小麦粉を用いた汁物の郷土料理（すいとんの一種）です。もちもちでつるっとした食感のひっつみは、食べ応えも満点です。
ひっつみの生地に日本酒を加えることで、薄力粉と水だけよりも、生地をなめらかにし、うまみをアップします。日本酒には昆布と同じうまみ成分のグルタミン酸が入っているので、もちろんスープにも日本酒を入れてうまみをプラス。

ひっつみ鍋
材料（※作りやすい分量）
- 薄力粉
- 1/2カップ
- 日本酒
- 小さじ1
- 水
- 25cc
- ごぼう
- 30g
- 鶏もも肉
- 100g
- きのこ(しいたけ.しめじ等)
- 適量
- 長ねぎ
- 1/2本
- みつば
- 適量
- しらたき
- 100g
- (A)しょうゆ
- 大さじ1
- ┗塩
- 小さじ1/3
- ┗みりん
- 小さじ1
- ┗日本酒
- 大さじ1
- ┗鶏がらスープ
- 500cc
How to cook（作り方）
- 1.
- 深めのボウルに薄力粉を入れて、日本酒と水を少しずつ加え、耳たぶくらいの軟らかさになるまでこねて、ビニール袋に入れて2時間程度寝かせる。
- 2.
- ごぼうはささがきにして水に入れ、アク抜きをする。鶏肉は食べやすい大きさに切り、きのこは石づきを取って食べやすい大きさに切る。長ねぎは斜め切り、みつばは3～4ｃｍの長さに切る。
- 3.
- 鍋に鶏がらスープとごぼうを入れて火にかけ、少し煮えたら鶏肉ときのこを入れる。煮立ってきたらアクをとり、しらたきを加える。
- 4.
- 鶏肉に火が通ったらAの調味料を加え、味を調える。
- 5.
- 大きめのボウルに水を入れる。(1)の生地を出して、一口大ににちぎって水にくぐらせる。少し伸ばしながら(4)の鍋に入れ、浮きあがってきたら、長ねぎを加え、火を消す直前にみつばを入れる。
