しいたけと日本酒のW効果でうまみアップ！
寒いこの時期はやっぱりあったかお鍋ですよね。
しいたけと日本酒、それぞれのうまみ成分（グアニル酸とグルタミン酸）の相乗効果でスープのうまみはぐっとアップ！パンチを効かせるために七味を加えても◎。
干ししいたけを日本酒に浸しておくことで出汁の出をよくし、味もまろやかにします。お肉にも日本酒をからめることでお肉の臭みを緩和し、軟らかくしてくれます。
ピェンロー鍋（扁炉鍋）
材料（2人分）
- 干ししいたけ
- 4個
- 白菜
- 1/4個
- 春雨
- 20g
- 豚薄切り肉
- 80g
- 鶏もも肉
- 80g
- 水菜
- 20g
- 日本酒
- 少々
- ごま油
- 小さじ1
- 塩
- 適量
- 七味とうがらし
- 適量
How to cook（作り方）
- 1.
- 干ししいたけは日本酒大さじ1と水800ccに浸して半日程度置いておく。戻したしいたけは、4等分程度に切っておく。
- 2.
- 白菜は洗って食べやすい大きさに切る。春雨は、キッチンばさみなどで10cm程度に切っておく。
- 3.
- 豚肉と鶏肉は、食べやすい大きさに切り、日本酒をからめておく。
- 4.
- (1)のだし汁を火にかけ、沸騰したら(3)の豚肉と鶏肉を加え、干ししいたけと白菜の軸の方を入れてふたをする。
- 5.
- 肉に火が通ったら、春雨と白菜の葉の方を加えてふたをして、吹きこぼれない程度の火加減にして煮込む。火を消す前に、食べやすい大きさに切った水菜を加える。
- 6.
- ごま油を回し入れ、塩、七味とうがらしで味を調える。
