冷えた体に鴨のダシと大根おろしが効いたポカポカ鍋
鴨の旨味がたっぷり味わえるお鍋。旬の水菜や大根さらに餅入り巾着（油あげ）を入れるのがポイントです。
だし汁に日本酒を多めに入れることで、かつおだしのイノシン酸、日本酒のグルタミン酸の相乗効果で旨味が倍増します。
鴨が入手できなければ鶏肉でも代用できるので、冬の定番になりそうですね。すっきりした純米酒とよく合います。
鴨と水菜のおろし鍋
材料（４人分）
- 鴨むね肉
- 2枚
- 水菜
- 1束
- 油あげ
- 2枚
- 餅
- 4個
- 大根
- 1/4本
- だし汁
- 800ml
- (A)みりん
- 50ml
- ┗しょうゆ
- 50ml
- ┗砂糖
- 大さじ1
- ┗日本酒
- 大さじ3
- ┗しょうが（薄切り）
- 10g
- ※万能ねぎ
- 適宜
How to cook（作り方）
- 1.
- 鴨むね肉は薄くそぎ切りにし、水菜は5-6cm長さに切る。油あげは熱湯をかけて油抜きし半分に切り、袋状にする。その中に半分に切った餅を入れ、上部をようじで止める。
大根はすりおろして、軽く水けをきる。

- 土鍋にだし汁を煮立ててAを加え(1)を加える。

- ※お好みで小口切りの万能ねぎを散らす。

- ※鴨が無ければ、鶏で代用可能。
