ホームパーティーでも大活躍！
フランスで古くから伝わる伝統料理「リエット」。作り置きができて、お酒にも合うことから、ホームパーティーでも大活躍な一品です。豚肉を使用することが一般的ですが、今回は旬の食材である「さば」と「まいたけ」を使用。まいたけは食物繊維やビタミンB1、カリウム等が豊富で、高血圧予防や動脈硬化予防に役立つと注目されています。さばは日本酒と一緒に煮ることで、魚の臭みが緩和され、一層軟らかくなります。バケットのかわりに、クラッカーにのせて食べるのもオススメですよ。
さばとまいたけのリエット
材料（4人分）
- さば(切り身)
- 2切れ(約200g)
- 舞茸
- 200g
- にんにく
- 1かけ
- オリーブ油
- 大さじ2
- (A)日本酒
- 1/4カップ
- ┗水
- 3/4カップ
- (B)塩、こしょう
- 少々
- ┗バター
- 50g
- ┗くるみ
- 30g
- ┗パセリ
- 1/2本(茎を除く)
- バケット
- 適宜
How to cook（作り方）
- 1.
- さばは骨を除き、両面に塩少々をふる。舞茸は根元を落としてほぐし、にんにくは皮をむき、縦半分に切る。
- 2.
- フライパンにオリーブ油と、にんにくを弱火にかけ、香りが出てやわらかくなったら
さばと舞茸を加えて焼き色がつくまで加熱する。Aを注ぎ入れ約10分煮る。
- 3.
- 粗熱を取り、煮汁ごとフードプロセッサーに入れ、Bを加えて撹拌する。薄く切ったバケットにぬって食す。
