ジューシーな具材の組み合わせが後を引く
エスニック風味の一品です。
えびと豚肉のあんに日本酒を混ぜておく事で、
臭みが取り除かれ、素材の美味しさが引き立ちます。
チリソースにも煮切り酒を混ぜておくと、
辛味や酸味をまろやかにしてくれるので、食べやすくなります。
えびのひねりあげ
材料（2人分）
- ブラックタイガー(無頭殻付き)
- 3尾(60g)
- (A)片栗粉
- 大さじ1
- ┗日本酒
- 大さじ1
- 豚ひき肉
- 70g
- (B)塩
- 少々
- ┗こしょう
- 少々
- ニラ
- 4本
- (C)日本酒
- 大さじ1/2
- ┗片栗粉
- 小さじ1
- ┗しょうが(すりおろす)
- 小さじ1/2
- 春巻きの皮
- 2枚
- 揚げ油
- 適量
- 香菜
- 適量
- (D)チリソース
- 大さじ1
- ┗煮切り酒
- 大さじ1
How to cook（作り方）
- 1.
- ブラックタイガーは殻と背ワタを除き、Aでよく揉み込んで臭みを取ったら、水で洗い、水気を拭く。包丁でたたいてミンチ状にする。
- 2.
- ボウルに豚肉とBを入れて粘りが出るまでよく混ぜたら、2cmの長さに切ったニラ、(1)、Cを加え混ぜ、８等分する。
- 3.
- 春巻きの皮は十字に４等分に切る。春巻きの皮の中央に(2)をのせ、巾着型に口を閉じ、楊枝でとめる。残りも同様に作り、合計８個用意する。
- 4.
- 揚げ油を160℃に熱し、揚げる。キツネ色に揚がったら、楊枝を取り外し、香菜をのせた皿に盛り付け、よく混ぜたDを添える。
