春らしい色合いに気分もウキウキ！
ミモザ風サラダは通常、卵の白身と黄身を分けて作りますが、
今回はその手間を省いて炒り卵とカッテージチーズで簡単アレンジ！
ドレッシングはオリーブオイルがきいたシンプルな味付けにし、
甘みをたっぷり含んだ旬のグリンピースの素材の味を活かしました。
炒り卵は日本酒を加えてふんわりと仕上げましょう。
ドレッシングには煮切り酒を加えると、
レモン汁とお酢の角がとれて、まろやかに仕上げる事ができます。
グリンピースのミモザ風サラダ
材料（2人分）
- グリンピース(さや付)
- 30g
- レタス
- 60g
- 新玉ねぎ
- 30g
- 卵
- 1個
- 砂糖
- 小さじ2
- 日本酒
- 大さじ1/2
- サラダ油
- 適量
- 生ハム
- 20g
- カッテージチーズ
- 20g
- (A)オリーブオイル
- 大さじ1
- ┗酢
- 大さじ1/2
- ┗レモン汁
- 大さじ1/2
- ┗煮切り酒
- 大さじ1/2
- ┗砂糖
- 小さじ1/3
- ┗塩
- 少々
- ┗こしょう
- 少々
How to cook（作り方）
- 1.
- グリンピースは筋を取り、さや付きのまま、塩少々（分量外）をまぶし、日本酒少々（分量外）を入れた熱湯で約２分茹でる。火を止め、そのまま粗熱を取り、さやをあける。
- 2.
- ボウルに卵を割りほぐし、砂糖、日本酒を入れて混ぜ、サラダ油を熱したフライパンで炒り卵を作っておく。
- 3.
- レタスはざく切り、新玉ねぎは薄くスライスして水にさらした後、水気を拭き取る。
- 4.
- 器にレタス、新玉ねぎ、生ハムを盛りつけ、カッテージチーズ、炒り卵、グリンピースを順に飾る。よく混ぜたAのドレッシングをかける。
