旬の食材で春らしく！
暖かくなってくると、スーパーに並び始める「そら豆」。春が旬ですが、「おいしいのは3日だけ」と言われるほど、鮮度が命の食材です。冷凍保存も可能ですが、買ったその日のうちに食べるのがおススメ。そこで簡単につくれるリゾットはいかがでしょうか。独特な風味が特徴のそら豆ですが、チーズとの相性は抜群。玉ねぎを加えて煮込むことでリゾット全体に甘みが広がり、さらに日本酒を加えることで、ふっくらと炊き上がります。春らしく彩り鮮やかな一品。食卓もぱっと華やかになります。
そら豆のリゾット
材料（2人分）
- そら豆(正味)
- 150g
- ウインナー
- 4本
- 玉ねぎ
- 1/4個
- (A)洋風スープの素(固形)
- 1個
- ┗湯
- 4カップ
- ┗しょうゆ
- 大さじ1
- ┗日本酒
- 大さじ2
- ┗塩
- 少々
- ┗こしょう
- 少々
- オリーブ油
- 大さじ1
- 米
- 1合
- バター
- 10g
- パルメザンチーズ(粉)
- 大さじ1
- パセリ
- 適量
How to cook（作り方）
- 1.
- そら豆はさやからはずして皮をむき、塩ゆでする。ウインナーは1cmに切る。たまねぎはみじん切りにする。Aを混ぜてスープをつくる。
- 2.
- 鍋にオリーブ油、ウインナー、玉ねぎを入れて中火で3～4分炒め、米をそのまま加える。
- 3.
- 米が透き通ってきたら(1)のスープ1カップとそら豆を加える。時々、底からかき混ぜながら米にスープを吸わせる。スープがなくなってきたらスープを足す。これを3～4回繰り返す。
- 4.
- 15分ほどして米にやや芯が残るくらいに煮えたら、バターとパルメザンチーズを混ぜ、とろりとつやが出るまで、4～5分煮る。最後に刻みパセリを散らす。
