寒い時期のビタミンとミネラル補給に！
冬野菜の代表とも言える白菜。淡色野菜の仲間で栄養価が低いと思われるかもしれませんが、ビタミンCやミネラルが豊富に含まれています。寒い今の季節の栄養補給に最適な食材です。今回ご紹介する「白菜とゆずのリゾット」は、同じく冬の食材であるゆずを使用。白菜の甘味とゆずのふんわりした香りが楽しめます。日本酒を加えることで、旨味がプラス。さらにバターとチーズを加えることでコクが口の中に広がっていくので、食べ応えも十分ですよ。
白菜とゆずのリゾット
材料（2人分）
- ご飯
- 200g
- 長ねぎ
- 1/8本
- 白菜
- 100g
- ゆずの皮
- 1/4個分
- 日本酒
- 大さじ1と1/2
- (A)湯
- 300ml
- ┗固形チキンコンソメの素
- 1/2個
- ツナ(缶/油づけ)
- 1缶(70g)
- バター
- 10g
- パルメザンチーズ
- 大さじ2
- オリーブオイル
- 大さじ1
- 塩・こしょう
- 少々
How to cook（作り方）
- 1.
- 長ねぎはみじん切りにする。白菜は芯の部分を1cm角、葉の部分はそれより少し大きめに切る。ゆずの皮は白い部分をそぎ落とし、千切りにする。
- 2.
- 鍋にオリーブオイルを熱し長ねぎを中火で焦がさないように炒め、白菜の芯の部分と日本酒を加えて炒め、アルコールを飛ばす。
- 3.
- 白菜の葉の部分とAを入れて煮立て、ご飯を入れて蓋をし、約10分煮る。
- 4.
- 塩・こしょうで味を整えて、ツナ、バター、パルメザンチーズを加えてサッと混ぜて火を止め器に盛り、ゆずの皮をトッピングする。
