日本酒の力で味も風味もアップ！
水の分量を減らした代わりに日本酒を加えたことで、
少量の調味料でも味がしみこみやすくなり、
風味もアップさせることができました。
ビーフン、焼きそば、パスタなどの水分を吸う麺類は
直接、しょうゆやソースをかけると味が一カ所だけに
固まってしまいがちですが、
日本酒を加えることで全体を均一な味にしてくれます。
肉や魚の匂いを消してくれる生姜がアクセントとしても働いて、
お箸がどんどん進む一品に仕上がっています。
ビーフン炒め
材料（2人分）
- ビーフン
- 100g
- 豚もも肉
- 80g
- (A)日本酒
- 小さじ1/2
- ┗しょうゆ
- 小さじ1/2
- ┗おろししょうが
- 少々
- ┗片栗粉
- 小さじ1
- にんじん
- 20g
- もやし
- 60g
- チンゲン菜
- 60g
- (B)日本酒
- 大さじ1.5
- ┗しょうゆ
- 大さじ1.5
- ┗塩・こしょう
- 少々
- 水
- 2/3カップ
- サラダ油
- 適量
- ごま油
- 小さじ2
How to cook（作り方）
- 1.
- ビーフンは水に約15～20分漬けてもどし(時間外)、水気を よく切ってキッチンばさみで食べやすい長さに切り、ごま油小さじ1をまぶす。
- 2.
- 豚肉は細切りにしてAを揉み込んでおく。にんじんはせん切りチンゲン菜の葉はざく切り、茎は細切りにする。
- 3.
- 油を熱したフライパンで、片栗粉をまぶした豚肉を炒めて取り出しておく。きれいにした同じフライパンに油を熱して(2)の野菜を強火で炒め、しんなりしたらビーフンを加えてサッと炒める。
- 4.
- (3)に取り出しておいた豚肉を加えてよく混ぜ、合わせておいたBを回しかけ、煮汁がなくなるまで炒めたら最後にごま油を回しかけて仕上げる。
